Executive Summary :

The project aims at standardization of primary processing of cocoa for pre monsoon , monsoon and post monsoon period with respect to free fatty acid and to identity the major microbes which aid in fermentation and flavor enhancement. Possibility of enhancing cocoa flavor by inoculation of microbes as starter culture will be also explored.
