IN199806: An improved process for the preparation of hydroxylated lecithin from crude soybean lecithin

An improved process for the preparation of hydroxylated lecithin from crude soybean lecithin by hydroxylating crude soybean lecithin by using 30% hydrogen peroxide in the range of 1-4 w% of lecithin and 75% lactic acid in the range 12-18 w% of lecithin at a temperature ranging between 50 to 70°C at microwave power of 300 to 600W for a period of 5-60 min to obtain hydroxylated lecithin.
