Executive Summary :

Objective: a. Fine-tuning of the process for extraction of arabinoxylan from wheat bran b. Incorporation of arabinoxylan into bakery and meat products and their nutritional evaluation c. Safety evaluation and commercialization of process and AX incorporated products (bakery and meat products)

Summary: Arabinoxylan is considered to be one of the important dietary fiber with enormous health benefits as reported in the literature, including human studies. Previously under an FTT project, a process of extraction of arabinoxylan was established. The process is unique and cost-effective. The process yielded into two products viz. Calcium hydroxide soluble and insoluble arabinoxylan. Both are cost-effective compared to the existing processes. The current proposal aims to commercialize the arabinoxylan product after fine-tuning and also to incorporate these arabinoxylan products in different dietary fiber deficient food products.
